Okay, I did promise to share — even though I am legitimately embarrassed that this is what I ate yesterday. This definitely is WEIRDER than a usual day for me.
Breakfast: (first two pictures) eggs scrambled with onions, tomatoes (brown tomatoes look weird but taste super), and basil. I ate half and saved the rest for another day. About 200 calories.
Lunch: shrimp & vegetable spring roll with peanut sauce dip. 165 cal
Snack: 4 thin slices of bresaola (sp?), which is like prosciutto but made of beef instead of pork. 100 cal
Snack: smoked oysters & cream cheese on crackers. (I know it’s weird, but it was available … and it was actually quite good). ~150 cal
Dinner: roasted brussels sprouts (in spiced lemon juice & olive oil dressing) with a small portion of BBQ shredded beef (it was the only other meat option in the house, okay?). ~300 cal
Total: about 915 calories. As you can see, I ate a lot, I ate often, and I got tons of nutrients.
Goals for today: 1. Eat well 2. Eat more normal-looking foods :D
